Summary: Street foods are part of the shops that sell food on the streets ready for consumption. Due to the handling conditions found in these trades, they can cause public health risks. In this context, the objective of the study was to evaluate the safety of food during the handling, sale and consumption in the mentioned trades in the cities of Vitória and Serra - ES, as well as the level of knowledge of the seller and their perception of risk on the subject, microbiological quality of marketed foods and consumer knowledge on the same. The hygienic and sanitary conditions were analyzed by means of a checklist based on ANVISA RDC 216/2004 and its classification followed according to the recommendations of RDC ANVISA 275/2002. The vendors were evaluated for their knowledge and perception of food safety risk and the impact of their socio-demographic characteristics on them. For the evaluation of knowledge, a structured questionnaire containing 15 questions was used, based on previous studies. It was considered as satisfactory knowledge the vendors that obtained a percentage greater than or equal to 70% of hits. In order to assess the perception of risk, a structured scale of 10 cm was used, WHEREby sellers who obtained averages greater than or equal to 7 points were classified with good risk perception. Microbiological analyzes were also carried out on 63 commercialized foods. Consumers had their profile and knowledge assessed through a structured questionnaire. The results showed that 58.5 (n = 117) of the trades analyzed were classified as bad. The most present inadequacies were related to hand hygiene, environmental conditions and sanitary licensing. As for the seller, 74.0% (n = 148) presented knowledge considered unsatisfactory. The highest proportion of incorrect answers was related to hand hygiene (94.0%, n = 188). However, 87.5% (n = 175) showed high risk perception on food contamination. Only the variable participation in training impacted on the seller's knowledge. Among the analyzed foods, 57.1% (n = 36) were considered unfit for consumption, among which the hot dog had the worst microbiological quality, with 87.5% (n = 7) of contaminated samples above the limit established by current legislation Regarding consumers, 45.8% (n = 153) reported consuming a few times in the month. However, 73.6% (n = 564) did not trust the safety of the foods they consume, while 98.4% (n = 754) reported that diseases can be caused by food. It was observed that consumption is basically maintained by convenience (38.5%, n = 295). It was concluded that the itinerant trades presented
inadequate conditions of manipulation and sale, which put at risk the safety of the food and the health of the diners. These, in turn, do not have enough knowledge to choose and purchase food that is safe to eat.
