Food and Nutrition Education from an Interdisciplinary Perspective

Syllabus: Theoretical and practical study of Food and Nutrition Education (FNE) from an interdisciplinary perspective oriented toward the promotion of autonomy in health. The course addresses the expanded concept of food, considering its multiple dimensions: environmental, biological, cultural, economic, historical, psycho-affective, social, and political, linked to the Human Right to Adequate Food (HRAF), as well as the interrelations with the social determinants of health and nutrition. It discusses the pedagogy of Paulo Freire, the role of autonomy and freedom in food choices, and the limits of educational actions in contexts of vulnerability. Theoretical frameworks for FNE in public policies and methodological strategies for the planning, development, and validation of educational materials and actions are presented. Practical activities include the design and implementation of FNE actions and materials, culminating in a open class aimed at sharing and discussing the products developed.
