The lack of postgraduate courses in the area of Nutrition in the Espírito Santo state drove, in mid-2014, the proposal for the creation of an academic master’s degree in nutrition. Thus, in 2015, the Graduate Program in Nutrition and Health (PPGNS) was created, based on a core of professors from the Graduate Course in Nutrition together with professors and researchers from other departments at Ufes. It was the first and only Graduate Program in Espírito Santo to offer a Master's Degree in Nutrition, with the objective of training qualified professionals to work in research, teaching and/or in the development of technologies in different areas. of Nutrition, Food and Health.
The PPGNS started activities in the concentration area called Nutrition, Food and Health, with research carried out in three lines: 1) Quality and Innovation in Food; 2) Diagnosis and Intervention in Nutrition and Health; and 3) Biochemical and Physiological Adaptations in Nutritional Intervention Models.
PPGNS activities began in a very incipient way, in an improvised headquarters, with few laboratories and resources available. Since then, the PPGNS, through actions proposed in its Strategic Planning, with the support of the Ufes, has achieved important results with regard to the physical structure (new headquarters, classrooms and laboratories), as well as in the consolidation of research groups, researchers and scientific production.
At the end of 2016, with only two years of existence, the PPGNS underwent the 2017 quadrennial evaluation by Capes. The program's performance was considered compatible with a grade three. In the 2021 four-year evaluation, the program's performance was compatible with the increase in the grade to four.
The PPGNS has shown, through its indicators, that it is in an important phase of its development, and has shown its intellectual maturity, its capacity, commitment and importance for teacher training and the development of research, innovation and technology in the Espírito Santo and Brazil.
Maintaining an interdepartmental and interprofessional character is fundamental and one of the strengths of the PPGNS, as it integrates research in the area of Nutrition, Food and Health, developed by professors from different academic backgrounds and areas of expertise. In 2021, the Program's lines of research were restructured, as well as the entire curricular structure of the master's course. The three lines of research were reorganized into two lines, named as follows: 1) Food, Dietetics and Nutrition; and 2) Diagnosis and intervention in nutrition and health. The restructuring of the lines of research was strategic to promote the sustainability of the Program, as it balanced the workforce of the lines, and consequently of the training and production indicators. In addition, it was fundamental to optimize the working conditions of professors and students, with a balance in the offer of disciplines by line of research, in the representative participation of professors in the different commissions, allowing the continuous development of cutting-edge research, and consequently the training of qualified human resources to work in teaching and research activities in the area.

Graduates and enrolled:The program already has 93 masters and counts with 48 students regularly enrolled, all of them being masters.
