Syllabus: This course provides an integrated approach to contemporary food systems and their relationships with human health, environmental sustainability, social equity, and economic dynamics. It discusses fundamental concepts of food systems; determinants of food production, distribution, consumption, and waste; impacts of agri-food models on the food environment, nutrition, chronic diseases, food and nutritional security, the global syndemic, and planetary health. It analyzes public policies, governance, and regulatory frameworks that influence food systems at local, national, and global levels. It investigates the transition to sustainable food systems, including agroecology, adequate and healthy food, short supply chains, technological innovation, and climate change mitigation strategies.
